10 Minute Skinny Bang Bang Shrimp with Shredded Cabbage
yield: serves 4
total time: 10 minutes
ingredients:
5 tablespoons olive oil mayonnaise
3 tablespoons sweet chili sauce
2 teaspoons sriracha (or more if you like it spicy)
2 teaspoons lemon juice, freshly squeezed
1 pound raw, peeled and deveined shrimp
2 tablespoons cornstarch
1 tablespoon extra virgin olive oil
1 head napa cabbage, sliced into shreds
1/3 head red cabbage, sliced into shreds
1/4 cup fresh cilantro, torn
3 tablespoons chopped green onion
directions:
In a medium bowl, mix together the mayonnaise, sweet chili sauce, sriracha and lemon. Refrigerate until ready for use.
Toss the shrimp with the cornstarch, coating evenly. Heat the olive oil in a large skillet over high heat. Add the shrimp and cook until it just turns pink and opaque, about 4 minutes, turning once during cooking. Transfer the shrimp to mayo mixture bowl and mix to combine.
In a serving bowl, add the cabbage. Toss the cilantro in. To serve the shrimp, mix with the slaw. Enjoy!
