10 Minute Skinny Bang Bang Shrimp with Shredded Cabbage

yield: serves 4

total time: 10 minutes

ingredients:

  • 5 tablespoons olive oil mayonnaise

  • 3 tablespoons sweet chili sauce

  • 2 teaspoons sriracha (or more if you like it spicy)

  • 2 teaspoons lemon juice, freshly squeezed

  • 1 pound raw, peeled and deveined shrimp

  • 2 tablespoons cornstarch

  • 1 tablespoon extra virgin olive oil

  • 1 head napa cabbage, sliced into shreds

  • 1/3 head red cabbage, sliced into shreds

  • 1/4 cup fresh cilantro, torn

  • 3 tablespoons chopped green onion

directions:

  1. In a medium bowl, mix together the mayonnaise, sweet chili sauce, sriracha and lemon. Refrigerate until ready for use.

  2. Toss the shrimp with the cornstarch, coating evenly. Heat the olive oil in a large skillet over high heat. Add the shrimp and cook until it just turns pink and opaque, about 4 minutes, turning once during cooking. Transfer the shrimp to mayo mixture bowl and mix to combine.

  3. In a serving bowl, add the cabbage. Toss the cilantro in. To serve the shrimp, mix with the slaw. Enjoy!
