10 Minute Salmon with Wilted Greens


2 SERVINGS

Ingredients

  • 8 oz Salmon Filet Wild salmon if possible

  • 2 teaspoons

  • Your Favorite Spices (I used Season salt, pepper, oregano, garlic powder, onion powder and paprika)

  • 4 cups torn collard greens (I used kale, swiss chard, mustard greens and turnip greens)

  • 1 Tbsp olive oil

  • 1 Shallot minced

  • 1 cup White Beans rinsed and drained

Instructions

1. Preheat broiler. While oven is heating, season salmon with spices of choice. I purchase fish

seasoning from the local fish market! Place salmon on a piece of foil and place in oven. (Do

not fold foil over the salmon, leave open). Broil for 8-10 minutes or until salmon is pink and

cooked through.

2. In the meantime heat olive oil in saute pan over medium-high heat. Mince shallot and place in

pan once the oil is hot, stirring gently for 2 minutes or until opaque. Season shallot with salt

and pepper. Add greens to pan and saute until wilted, about 3-5 minutes. Stir beans into the

wilted greens and plate. (During cooking I add 1 Tbsp water to pan if greens are sticking or

shallots begins to burn. I also add a squeeze of lemon to the greens to help flavor). When

greens are sufficiently wilted, taste test and add additional salt and pepper/lemon juice if

needed.

3. Serve salmon on top of the wilted greens and beans. Squeeze additional lemon juice over

salmon if desired and serve.
