10 Minute Coconut Crusted Salmon

Serves: 2

Ingredients:

  • 2-5 ounce salmon filets, skin on

  • 2 Tbsp sweet chili sauce

  • 2 Tbsp panko bread crumbs (or you can substitute 2 Tbsp shredded coconut to make this grain-free)

  • 3 Tbsp sweetened shredded coconut

  • 1 Tbsp avocado oil (or olive/coconut oil)

  • freshly ground pepper and salt, to taste

  • additional sweet chili sauce, for serving

Instructions:

  1. Preheat broiler. Place salmon on a piece of foil. Rub salmon with sweet chili sauce.

  2. In a small bowl, combine bread crumb, shredded coconut, oil and a pinch of salt and pepper. Gently press the coconut mixture on top of the salmon, covering the top completely. Add additional breadcrumbs if needed.

  3. Place salmon in oven and broil for about 8 minutes, until salmon is cooked through and a nice pink color.

  4. Serve with sweet chili sauce and enjoy!! xo
